The only one you probably can't get right now is Glaceon which you can evolve Eevee into just before the 7th badge. You can get Vaporeon, Jolteon, and Flareon by digging him stones in the underground and I assume you already know how to get Espeon and Umbreon.
Leafeon you can get by levelling up Eevee near the moss-covered rock in Eterna Forest and Glaceon you get doing the same thing near the icy rock on Route , although in reality you can level Eevee up anywhere in the forest or route. Basically it comes down to which one you like the most as in-game only their elemental really affects things greatly. If you lack any of the types they have, get that one if you can't pick your favorite.
Although don't expect Umbreon to be doing much damage, it's the only Eeveelution who doesn't excel in either attack score, but it's got great defence, special defence, and hp. I personally would pick Espeon, because of what the others have said. Espeon can work as a revenge Pokemon, and - apparently more commonly - a Baton Passer as well. It's movepool is awesome and easier to set up. Espeon, when you get enough shards, it can cover it's dark type weakness with Signal Beam.
Plus, even if you can't get it to a high enough level to learn Psychic by the E4, Psybeam is still power with stab. King Gumball. I like Espeon the best. And I prefer it for battling.
